Studies complete in Nutritional Wellness!

I have always had a passion for cooking with color, but I wanted to understand the 'science' behind all that color on your plate. So, with the assistance of my employer, IBM, I was able to take a leave of absence and go back to school to get certified in Holistic Nutrition & Wellness Coaching. I know, I know, going back to school at any age can be daunting, but I did it.

I completed my studies last month, just as the Coronavirus thing hit. My practicums had to be done remotely over the phone and my last 2 classes entailed sitting on a Zoom session for 4 hours each! I learned a lot about nutrition, what and why we eat, and most of all I learned a lot about myself thru the sharing with my other classmates. It was humbling at times looking out over the class and seeing these young persons creating a life for themselves and families. I gained so much from the experience, and it isn't over yet!

I accepted an extern/internship with Idaho Rocky Mountain Ranch (photo by Craig Wolfrum Photography) up in the Sawtooth National Recreation area where I am going to be working with the executive chef on healthy & nutritious meals for the staff (and a few client meals). On our days off we are planning on hiking the many, many miles of trails near Stanley, Idaho. Of course the virus has delayed the opening slightly, but it looks to still be a go. Shirley took a Yoga Instructor job at the same resort so we'll be kicking it in Idaho this summer!

Watch this blog for more on the adventure and follow us on instagram at #cookingandcolor & #shirleylovesyoga. Cheers! -Ray
